I must say that, the century egg is a delicacy of acquired taste just like the blue cheese. I didn't quite like it the first time I tried it. In order to impress my colleague, I have made a unique and easy to make 3 colour Chinese steamed egg. Basically it is a combination of 3 eggs (chicken egg, salted egg (the Asian supermarket that I went to have the ready cooked one) and the century egg. Surprisingly, it was good. Must be of the combination I guessed. I did not smell the pungent smell at all. There are other recipes that I haven't try yet. Basically the recipes are more of Asian style and not much of uncommon ingredient which I believe you can find in the Asian supermarket.

This book makes me take a second look at the humble, often taken for granted super-food (the EGG) and the author has amazed me by the numerous delicious yet healthy ways this humble egg can be prepared. A delectable collection of 21 easy to prepare, healthy yet sumptuous recipes for Egg dishes drawn from various Asian cultures (Chinese, Malay, Thai, Indian & Japanese) presented in a clear and step by step manner. The Author did well to provide useful basics, nuances and tips related to 4 main Asian methods of cooking eggs (stir-fry, steam, scramble and hard boil) and this laid a good foundation for applying the cooking methods to the recipes. Whilst some methods are also used in Western cooking, e.g., scramble, the author explained the Asian twist to the methods. The photos showing how each completed dish looked like provided a helpful visual reference. This comprehensive egg recipe collection has an egg recipe to suit every taste-bud. The clear and easy to follow cooking instructions can turn even non-cooks into Egg chefs. It is a must-have Egg cookbook for anyone who is an egg-lover and indeed it is a must-have cookbook in every kitchen.
